Caspers Everglades Mobile Kitchen Brings Ribs, Gator
and Fine Southern Cuisine to Western Washington
(Everett, WA) Casper Townsend believes that its time to put some south in the mouth of people here in the Pacific Northwest. So he launched Caspers Everglades Mobile Kitchen, a Florida-style catering service for festivals, fairs and corporate events. .. Besides classic baby-back ribs, gator, fried chicken and frog legs, the rolling restaurant also offers traditional fine-dining menu items.
The specially designed rig for Caspers Mobile Kitchen is 35 feet of chef heaven, and probably the most modern self-contained kitchen in the Northwest. It can roll up to a site, and within an hour serve 600 people. With four double-bank deep fryers, cooks can feed as many as 1,000 people at a time. They can roast a 200-pound pig on the bottom of their humongous smoker, while cooking 100 salmon halves on top. The rig has its own electricity, gas and water.
The mobile catering rig represents a 40-year dream for Casper Townsend, a native of Naples, Florida, and former lumber broker. His passion, however, was always large-scale barbecuing and fish fries for charity fundraisers. Cooking is my life, said Townsend. Its taken me decades to get these recipes just right, for truly authentic Southern cuisine. When people say my ribs are the best theyve ever tasted which they do all the time it practically brings tears to my eyes.
Some of the biggest names in Washington are clients of Caspers, including Boeing, Comcast and Home Depot. His rig has drawn enthusiastic crowds at the Evergreen State Fair, King County Fair,Lynden County Fair, Taste of Edmonds, Marysville Strawberry Festival , Lake Stevens Aqua Fest, I might add that we have been invited back to all of the events for 2008..
People get a kick out of trying fried alligator for the first time, explained Townsend, and we always sell out of it. Our gator comes only from approved farms in Florida, where they are raised under controlled conditions. We never cook wild gator, or crocodile meat, which is strictly illegal.
Caspers Everglades Mobile Kitchen works closely with corporate event and festival planners, and already has bookings for the summer, its busiest time. It delivers a complementary meal to planners who are seriously considering their services. As Townsend said, One taste is all we need before a person is hooked. As a testimony to the quality of his food, several international restaurant chains and retailers have tried to buy his recipes without success.
