As a new restaurant to Omaha, The Grey Plume focuses on seasonality and sustainability. The Grey Plume writes a menu daily, much of which is based on local farmer"s supply and preserves the Nebraska produce harvest for the winter months. The Grey Plume works in partnership with The Green Restaurant Association and is the first and only Certified Green Restaurant in the tri-state area.
